It sounds yucky, but it’s really all veggies, so that means it’s really good for you – and a blast to make!

What You Need:
|

- cherry tomatoes
- small black olives
- salad greens; baby spinach leaves, or lettuce
|
|
|
What You Do:
|
|
|
“Ladybugs”
- Wash all your tomatoes.
- Toss your salad greens, baby spinach leaves, or lettuce in a bowl, then place some in the center of individual salad plates.
- Cut your tomatoes in half, and scoop out the seeds using the tip of a vegetable peeler.
- Make a slit 3/4 of the way through your tomato half and slip it over a small black olive. Spread the “wings” a bit.
- Cut the closed end of an olive off, and then cut it in half. Place it next to the “ladybug” to make a head.
- Make several “bugs” and put them on each plate for decoration. Top each salad with the leftover olives and tomatoes. Then sit back and watch the expressions on your family’s face when you serve them Ladybug Salad!
